Dabeli, also known as Kutchi Dabeli, Is a popular street food from the Indian state of Gujarat. It’s a spiced potato mixture served in a bun, often garnished with a variety of chutneys and toppings. Here’s a general idea of what goes into making Dabeli.

Ingredients:

For the Potato Filling:

  • Boiled and mashed potatoes
  • Dabeli masala (a spice mix available at Indian grocery stores or homemade with a blend of spices like cumin, coriander, chili powder, and more)
  • Tamarind chutney
  • Date chutney (optional)
  • Chopped onions
  • Chopped fresh coriander leaves
  • Pomegranate seeds (optional)

For the Assembly:

  • Pav (soft buns)
  • Butter or oil for toasting the buns
  • Chopped onions
  • Finely chopped cilantro
  • Sev (crispy chickpea noodles)
  • Pomegranate seeds
  • Lemon wedges

Method

Prepare the Potato Filling:

  • Heat a bit of oil in a pan, add the Dabeli masala, and cook briefly.
  • Add the mashed potatoes and mix well. Adjust seasoning as needed.
  • Add tamarind chutney and optionally date chutney for a sweet-tart flavor. Stir in chopped onions and fresh coriander.

Toast the Buns:

  • Slice the pav/buns and lightly butter the insides.
  • Toast them on a hot griddle or pan until golden brown.

Assemble the Dabeli:

  • Spread some of the potato filling onto the bottom half of each bun.
  • Top with a sprinkle of chopped onions, fresh coriander, and pomegranate seeds.
  • Add a layer of sev for crunch.
  • Close the bun with the top half and serve.

Serve

Dabeli can be served with various beverages and chutneys.
